Directions

  1. Cook UNCLE BEN'S® Jasmine 10 Minute rice.
  2. In a large non-stick skillet, add coconut milk, chicken stock, curry paste and brown sugar and mix until smooth. Simmer over medium heat for 3 minutes.
  3. Add chicken, stir and simmer 5 minutes. Add bag of frozen vegetables, stir and simmer 5 minutes, then add lime juice and soy sauce.
