Directions

  1. In a non-stick skillet, heat oil over medium-high heat. Brown pork tenderloin medallions on both sides. Remove from skillet. To the same skillet add onion, garlic, and ginger, and cook until softened.
  2. Add apple sauce, stock, and dijon. Return pork, cover, and simmer until pork is done (135F-140F temp). Cook baby carrots.
