Salsa Chicken

Directions

  1. In a large non-stick skillet, heat oil over medium-high heat. Add chicken and cook until lightly browned, about 5 minutes.
  2. Add salsa and stock, and bring to a boil. Reduce heat to medium-low, cover, and simmer for 15 minutes. Stir in cooked UNCLE BEN'S® BISTRO EXPRESS® Vegetable Medley rice.
  3. Garnish with avocado.
