Red Beans and Rice with Chorizo

Directions

  1. In a large non-stick skillet, heat oil over medium heat.
  2. Add onion, celery, pepper, and garlic and cook, stirring for 5 minutes until the vegetables are soft.
  3. Add UNCLE BEN'S® CONVERTED® Brand Rice, stock, kidney beans, and sliced chorizo. Bring to a boil, cover, reduce heat to low and simmer for 17 minutes.
