Pesto Chicken

Directions

  1. In a large non-stick skillet, over medium heat, add chicken stock and 2 tbsp (30 mL) of pesto. Stir until well combined. Add chicken, cover, and simmer 15 minutes until chicken is cooked.
  2. Add in UNCLE BEN'S® BISTRO EXPRESS® Long Grain and Wild Fine Herb rice and tomato.
  3. Serve chicken brushed with remaining 2 tbsp pesto over rice and tomatoes.
