Directions

  2. In a large non-stick skillet, heat oil over medium-high heat. Add chicken and cook until lightly browned (about 5 minutes).
  3. Add onion, pepper, corn, tomatoes (with their juice), and chili powder. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 15 minutes.
